How Matcha Is Made in Japan: From Tea Leaf to Stone-Ground Powder
Japan — Matcha, the vibrant green tea powder known worldwide for its health benefits and cultural significance, is the result of a meticulous and centuries-old production process. From carefully shaded tea fields to traditional stone mills, every step contributes to matcha’s unique flavor, color, and quality.

1. Shading the Tea Plants
The journey of matcha begins several weeks before harvest. Tea plants, mainly of the tencha variety, are covered with bamboo mats or modern shading nets to block sunlight. This process slows photosynthesis, increasing chlorophyll and amino acids such as L-theanine. As a result, the leaves develop a deep green color and a rich umami taste.
2. Hand-Harvesting Young Leaves
Only the youngest and most tender tea leaves are selected, usually harvested in late spring. In premium matcha production regions like Uji, Nishio, and Shizuoka, hand-picking is still practiced to ensure consistent quality and minimal damage to the leaves.
3. Steaming and Drying
Immediately after harvesting, the leaves are steamed briefly to prevent oxidation. Unlike other green teas, matcha leaves are not rolled. They are gently dried and flattened, preserving their nutrients and natural color.
4. Creating Tencha
Once dried, stems and veins are carefully removed, leaving behind pure leaf material known as tencha. At this stage, the tea is not yet matcha but is already highly valued for its aroma and softness.
5. Stone Grinding into Matcha
The final step is slow stone grinding using traditional granite mills. Each mill produces only about 30–40 grams of matcha per hour. This slow process prevents heat buildup, ensuring the powder remains ultra-fine while retaining its vibrant green color and delicate flavor.
